At the Seeglück Hotel Forelle, autumn becomes the stage for special culinary experiences. During our culinary nights, you can expect creative menus that combine regional products, surprising accents and the full diversity of our Alpine-Adriatic cuisine. Our kitchen team will take you on two culinary journeys that capture the flavours of the forest and water as well as the sophistication of Alpine smoking culture. Let yourself be enchanted by fine aromas, refined compositions and the atmospheric ambience by the lake – a moment of pleasure that will remain in your memory for a long time to come.
From Lake to Deer - 27.09.2025
A menu that moves between forest and water, between subtle flavours and surprising accents. It begins with a light whitefish ceviche, refined with sea asparagus, mandarin and kaffir lime. This is followed by a finely balanced Carinthian bouillabaisse, served with homemade ravioli and marinated salmon trout.
A two-piece dish of golden trout, accompanied by parsley root and blood orange, brings depth and freshness at the same time. This is followed by a surprisingly tender huchen cooked sous vide on a bed of Prosecco risotto with dill and dashi. The sweet finale is a mango and coconut dessert that captures the flavours of sun and sea. A menu for anyone looking for elegance, regionality and fine harmony on the plate.
Everything from the Smokehouse - 11.10.2025
This menu pays homage to the Alpine smoking culture - hearty, strong and yet refined. It starts with an aromatic beef tartare, refined with yolk, camembert and chilli. It continues with textured celeriac, accompanied by soya and alpine butter - a play on textures and flavours.
The essence of the evening: a hearty double consommé with ham ravioli, followed by a rustic and elegant main course: Beef brisket, cooked sous vide and lightly smoked, with pommes dauphine, wild broccoli and bacon. The dessert: an airy chocolate mousse with coffee crumble and bacon crisps - surprising and wonderfully balanced.
